Artichoke Pesto


Artichoke pesto is a tasty pesto that can be prepared as quick as any other. You can adjust the level of sharpness by varying the amount of lemon juice.  Use it as a condiment to accompany meat or as a sandwich spread. Difficulty: Very easy 



  • 1 tin of artichoke hearts
  • 20g fresh parsley leaves
  • Handful of walnuts
  • 1 lemon, zested and juiced
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 100ml olive oil
  • 50g grated parmesan


In a food processor, combine the drained artichokes, parsley, walnuts, lemon zest and juice, garlic, salt, and pepper. Drizzle in the olive oil, adding more or less, as necessary. After, mix in the parmesan with a spoon.
